The Winery

About us

The wines of Dadah Winery have deep earthly flavors, with complex aromas obtained from matching the types of grapes to the types of soil and climate conditions in the various regions. As a result, their taste is ‘Israeli’ and uniquely local.
Every year in Dadah Winery we make innovative and original blends where the flavors are combined anew, combining grape varieties and different types of barrels, which gives these wines a deep and colorful character.

The owner and winemaker of Dadah Winery, Jacky Hazan, developed his skills and palate through years of planning and establishing a variety of wineries in Israel. After about thirty years working in the field primarily in the technical and operational side of wineries, he founded Dadah Winery in 2007, along with his good friend Nehemiah Khatbi (also an engineer). Together, they poured their passion, creativity, and energy in Dadah Winery.

Jacky and Nehemiah named the winery after Jacky’s grandmother, Ima Dadah (‘Mother Dadah’), out of great love and respect for her. Mother Dadah was a Moroccan winemaker from Marrakesh, who received special approval from the King of Morocco to engage in this delicate and complex craft, over 120 years ago.
Ima Dadah’s spirit and knowledge been preserved over the years, transferred from the fragrant alleys of Marrakesh to the slopes of the Carmel, lush with the green of oak and olive trees, the colors of wildflowers and the sounds of wildlife in Makura Farm near Kerem Maharal.

The winery is located at the heart of an ancient volcano, where a natural spring and ancient archeological remains come to life.

The aromas of Dadah wines are rooted deep in the land of Morocco, and their branches are continually being adapted to the Mediterranean climate and nourished by the different types of soil in Israel.

Makura Farm

Makura Farm is a unique organic farm, which grows olives, avocados and persimmons. With their own traditional olive press, olive oil is manufactured delicately, as if it were pure gold. The farm spreads over a large area on the slopes of Mount Carmel and is situated in the heart of an extinct volcano, surrounded by ancient cisterns, wells and presses with a thousand-year history.

In this gem of nature, amidst the wildlife, trees and wildflowers, we established our winery, weaving red and purple threads into the colorful tapestry of Makura Farm.
